3 famous classic salad dishes (easily done)

Classic salad dishes will save your day!

Today, shall we dive in some of the all-time classic salad dishes? Count me in. I will be sharing my favorite recipes (voice from the back: “not Caesar salad please!”) and hope you can easily replicate them.

You can start with simple prawn salad with total preparation less than 20 minutes, or try Waldorf salad, which can be conveniently made up to 2 hours in advance and stored. If you want to more heartfelt salad dish, try Salad Nicoise!

1. Salad Nicoise

Preparation

  1. Place the eggs in a saucepan of cold water. Bring slowly to the boil, then reduce the heat and simmer for 10 minutes. Stir during the first few minutes to centre the yolks. Cool, then peel and cut into quarters. Meanwhile, score a cross in the base of each tomato (you already knew this technique from my previous post). Place in a bowl of boiling water for 1 minute, then plunge into cold water and peel the skin away from the cross. Cut into eighths.
  2. Trim the beans and cook them in a saucepan of boiling water for 2 minutes, then refresh quickly under cold water and drain. Place the oil and vinegar in a jar and shake to combine.
  3. Rub the garlic halves over the base and sides of a large salad serving platter. Arrange the lettuce wedges evenly over the base. Layer the tomato, capsicum, celery, cucumber, beans and egg quarters over the lettuce. Scatter with the onion and tuna. Arrange the olives, anchovies, capers and basil leaves over the top, pour the dressing over the salad and serve immediately.

2. Prawn salad

Cocktail sauce

Preparation

  1. For the cocktail sauce, mix all the ingredients together in a bowl, then season with salt and pepper.
  2. Peel the prawns, leaving some with tails intact to use as a garnish. Remove the tails from the rest. Gently pull out the dark vein from each prawn back, starting at the head end. Add the prawns without tails to the sauce and mix to coat.
  3. Arrange lettuce in serving dishes or bowls. Spoon some prawns into each dish. Garnish with the reserved prawns, drizzling with some dressing. Serve with lemon wedges and bread.

Note: You can make the cocktail sauce several hours ahead and refrigerate. Stir in 2 table spoons of thick cream for a creamier sauce.

3. Waldorf salad

Preparation

  1. Quarter the apples, remove and discard the seeds and cores, and cut the apples into small pieces.
  2. Place the diced apple in a large bowl, drizzle with the lemon juice and toss to coat (this will prevent the apple discoloring). Add the walnut pieces and celery and mix well.
  3. Add the mayonnaise to the apple mixture and toss until well coated. Spoon the salad into a lettuce-lined bowl and serve immediately.

Note: Waldorf salad can be made up to 2 hours in advance and stored, covered, in the refrigerator. It is named after the Waldorf-Astoria hotel in New York where it was first served.
